This lot comes from Finca Buenos Aires near the town Ocotol in Nicaragua's Nueva Segovia Department. Nueva Segovia is a highland area with steep hills and plateaus replete with large rivers. It is also home to the Chorotegas and Nahuas indigenous populations.
Maracaturra is a large bean varietal with exceptional cup quality. It is a cross between Caturra and Maragogype (elephant bean) varietals. Initial cultivar selections were made the Nicaraguan Institute of Agriculture Technology in 1976, but were never completed due to the Sandinista resolution. Subsequent selections were made by private producers in Central America.
This is a honey processed lot. After the coffee is harvest, it is pulped, and then laid out to dry with some fruit and sticky mucilage intact. In washed processed coffees, after being pulped coffee is fermented and washed to remove fruit and mucilage prior to drying. Honey process can bolter body and fruited notes as is the case with this Maracaturra lot from Finca Buenos Aires.
