This lot comes from fourth generation producer Sebastian Ramirez. Seb is a highly innovative and accomplished producer. His farm, Finca El Placer, sits around 1750 meters above sea level in Quindío, Colombia.
Pink Bourbon was first discovered in Acevedo, Huila, Colombia. It has recently been found not to be a Bourbon mutation as originally suspected, but rather genetically linked to Ethiopian landraces. The fruit is pinkish, the seeds are elongated, and the cup is syrupy sweet and floral.
This lot is a straightforward washed preparation. After being harvested and depulped, coffee spent 24-36 hours fermenting before being washed and a 2-phase drying period.
