This coffee comes from Maria Clavelita. Maria is a second generation coffee grower. Her farm is in the small, tranquil, and remote village of Santo Domingo Cacalotepec in Oaxaca. The region is mountainous and densely forested replete with deep valleys and contains the ideal conditions for coffee cultivation. Many villagers belong to the indigenous Zapotec culture. They live a life in harmony with the land and practice traditions passed down through generations to include coffee cultivation.

This lot is a Typica separation and was processed using a traditional washed method. After harvesting only the ripest cherries, this lot underwent a 12 hour full cherry fermentation before being depulped, fermented for an additional 38 hrs, washed, and finally dried for 8 to 10 days on patios and azoteas (rooftop drying terraces).
