Arnulfo Caro and his wife, Martha, own and manage their 2 hectare farm in Anzá, Antioquia. It is a mountainous region in the central northwest part of Colombia. The farm sits at an impressive 2100 meters above sea level. They have Chiroso and Gesha planted on the farm. Chiroso is a coveted cultivar with exceptional cup quality potential. Genetically it is directly linked to Ethiopian landraces. It was first identified in Urrao, Antioquia, Colombia, and started winning competitions in 2014. The seeds are elongated, the trees display dwarfism, and the cup is delicate, juicy, and often floral.

Arnulfo came into coffee farming rather late. He had previously worked as a miner, but became inspired by his uncle who worked in coffee and took on a plot of land in 2020 that is now known as Hoyo Rico. Their first harvest was in 2022. Arnulfo is fully dedicated to expanding the farm and refining his practice.

This is our first time buying coffee from Arnulfo, and maybe our first time offering a Chiroso lot from this part of Antioquia. We really like what Arnulfo was able to do with this lot. He certainly has great elevation and a wonderful varietal to begin with. His approach to processing this lot was to let the coffee ferment in its fruit in tanks for 3-4 days before depulping and then spending 8 whopping days in stainless tanks with water and temperature monitored and regulated. We assume that water was regularly refreshed with clean water as the cup presents itself very clean and does not show blights of extended processing. The extended fermentations has worked to increase body, turn up flavor volume, and make mouthfeel more syrupy.
