This coffee comes to us from the small and remote Baaroo cooperative in the far western reaches of the Illubabor zone in western Ethiopia. The area is heavily forested and growing altitudes are around 1700 masl. Because this area is so heavily forested the development of the coffee is slowed down producing a denser coffee seed. Denser seeds can lead to brighter, more complex cups with sucrose like sugar flavors, which largely holds true in this case.
This coffee is a lighter roast. Fragrance of dry grounds is very sweet, notes of toffee and distant stone fruits. Adding hot water boosts stone fruit aromas, apricot and peach being most discernible, joined by scents of maple sugar and brown sugar. The cup is juicy with well-integrated lemon-like acidity; notes jasmine is the hotter cup, lemonade, apricot, and honey, accents of baking spices, smattering of cocoa throughout.
