This coffee comes to us from Fazenda do Sertao in the Mantiqueira Mountains in Carmo de Minas, Brazil. Grown at about 1250 masl., this lot is a Yellow Bourbon separation -meaning other varietals are grown on the farm but this lot is exclusively Yellow Bourbon. Yellow Bourbon was first grown in Brazil. It is a natural mutation of a cross between Bourbon and yellow-fruited Typica. After this coffee was harvested it was laid out to dry for 30 days before skin, fruit, and hull was removed.

This coffee is a medium roast. Fragrance of dry grounds is nutty with subtle fruit tones. Aromas of wet grounds remain nutty and show unrefined sugar sweetness with earthy chocolate and dark fruit scents. The cup has a great raw sugar sweetness to it which is nicely offset by bittering cocoa tones; flavors of almond paste are accompanied by cooked fruit, dried stone fruits, and chocolate.
