Finca Jose is an off-the-beaten-path farm located on a rocky outcropping in Costa Rica’s Chirripó National Park. Altitudes on the farm top out around 1950 masl. The growing region is La Piedra de Rivas, and coffees in this area offer a more complex cup than Costa Rica’s more familiar coffee growing regions. We are calling this a “machine washed” coffee. Fruit and most of the mucilage is mechanically removed leaving a parchment encapsulated seed that looks like a traditional washed coffee even though there is no washing involved. This is similar to honey processed coffee, however due to how little mucilage is left on the parchment we have chosen to parse our terms and refer to it as “machine washed”.

This coffee is a light-medium roast. Grinding this coffee releases fragrances of unrefined sugars, cinnamon, and almond cookie. Wet grounds have the aroma of bittersweet cocoa with dried cherry accents. The cup is balanced, molasses sugar sweetness, bittersweet roast tones, black tea like acidity, flavors of apple cider, cinnamon stick, pistachio, and raw sugar.
